Rolled eggs. The original.

Three eggs cracked with diced tomato, white onion, and shredded cabbage — cooked into a flat omelette on the charcoal griddle, then rolled tight inside a freshly pressed chapati. Finished with chili oil and a squeeze of lemon.

Rolex Fries

Cassava. Fried golden.

Cassava root, peeled and cut thick, boiled until just yielding, then dropped into hot groundnut oil until the outside shatters. Dusted with Cayenne, smoked paprika, and a pinch of dried thyme. The crunch you hear across the courtyard.

Here you don't wear a Rolex. You eat one.

Born on the streets of Wandegeya near Makerere University, the Rolex is Uganda's most beloved street food — a chapati wrapped around a spiced egg omelette, sold for less than the cost of a bus fare. Students lived on them. Then everyone else did too.

We brought the charcoal griddle, the flat pan, and the technique from Kampala to the UK. Nothing premade. Everything cooked live in front of your guests — the steam, the sizzle, the smell — is the entertainment.
